5 SPRING VEGGIES THAT ARE READY TO HARVEST IN LESS THAN 45 DAYS!

Lettuce can go from seed to harvest in just 45 days. Pick larger outer leaves first, for a continuous harvest.

Who doesn’t like a quick win, especially in the garden? If you’re looking to grow and harvest food in 45 days or less, then plant these veggies in your garden:

  1. LETTUCE: Direct sow your lettuce seeds in your garden and cover with just a little dusting of soil. Keep the soil well watered and moist to facilitate germination. You can grow mixed salad greens, iceberg lettuce varieties like ‘Little Gem’, ‘Tennis Ball’ or ‘Tom Thumb’, romaine varieties like ‘Paris Island Cos’, ‘Flashy Butter Gem’ or ‘Buttercrunch Lettuce’ too. For a continuous harvest, pick larger outer leaves, and grow in partial shade.

  2. ARUGULA: I grow arugula almost like ground cover or mulch in my vegetable garden. It’s very short, great for filling up empty spaces in the garden and grows in under 45 days. It has a distinct peppery, spicy flavor and highly nutritious.

  3. SPINACH: If you love drinking green smoothies then you have to grow spinach! You can direct sow seeds in furrows in your garden or plant seedlings too if you wish. Spinach thrives in the cooler months of spring and fall and is one of the first crops that I plant in my garden as soon as the ground has thawed and is workable. You can enjoy baby spinach in just 30 days from planting, or wait a little longer for larges leaves. My favorite variety is ‘Bloomsdale Longstanding Spinach’ and ‘Giant Noble’. If you live in a warm climate, try growing ‘Malabar Spinach’ which is more heat tolerant.

  4. RADISH: Radishes are probably one of the fastest maturing crop in the garden. I always directly sow radish seeds 2” apart in good soil that’s light and fluffy. I love ‘French Breakfast’, ‘Roxanne’ and ‘Easter Egg’ radish varieties, but ‘Cherry Belle’ is a much smaller radish that you can harvest is just 25 days! Like all the other crops mentioned in this article, radishes grow best in the cool season of spring and fall.

  5. SPRING ONIONS: You don’t even need a garden to grow spring onions! I propagate the bottom 3 inches of my grocery store bought spring onions by placing just the roots in a bowl of water (change water daily). You will see them grow in literally a matter of hours! Place on a sunny window-sill and watch them grow. You can of course plant the cuttings directly in soil too if you wish.
