Recipe for Date & Cacao Truffles
Seriously delicious, healthy, melt in your mouth truffles! Perfect for gifting during the holidays, if you resist eating them all!
Recipe (makes 9 to 10 truffles)
Ingredients:
275 grams Medjool dates, pitted
2 tbsp Bourbon
3 tbsp cacao powder
1/3 cup almond flour
1 tbsp pistachio powder
112 grams (1 bar) vegan chocolate or 70% cacao chocolate
1 tbsp candied ginger (chopped into small pieces)
A few pinches of roughly ground pistachio (for decorating)
Proceed:
1. Soak pitted dates in bourbon for 15 to 20 mins.
2. Add soaked dates, cacao powder, almond flour and pistachio flour into a food processor and pulse until smooth and no chunks exist.3. Take the dough out and place on a plate and mix in candied ginger pieces.
4. Form into 9 to 10 balls of equal size and set aside.
5. In the meantime, melt the chocolate over a double boiler.
6. Carefully roll balls in the melted chocolate and place on a sheet of parchment paper to cool.
7. Sprinkle a tiny bit of ground pistachio on top of each chocolate covered truffle, (it almost looks like a smattering of gold dust)! You can even sprinkle a tiny bit of fleur de sel or sea salt and a dusting of cacao powder if you wish!
Refrigerate for a few hours for a chewy texture! Enjoy!
